It’s pretty safe to say that every now and then, we all get a craving for ice cream. And we all deserve a treat every now and then. Unfortunately, most of what is on the market today is very processed and full of unnecessary and artificial ingredients. That is why today, we are sharing a recipe for sweet potato ice cream- yes, you read that correctly, sweet potato ICE CREAM.
Sweet potatoes are- you guessed it- sweet, so it is very easy to use them to make a cold, creamy treat! This is what you need:
1 can full fat coconut milk*
*look for a brand that does not contain anything but coconut, water and guar gum*
6 ounces cooked sweet potato
4 tbsp. maple syrup
¾ teaspoon ground cinnamon
Pinch of pink Himalayan sea salt
Bake sweet potato at 435 degrees F for 45-50 minutes, until tender. Mix all ingredients together and put them into an ice cube tray. Freeze for 6 hours, and then pop them in a food processor or blender to blend, and you have delicious sweet potato ice cream!
