Tomatoes can go bad pretty quickly and when we do use them, a lot of it ends up getting thrown away. And if you have a garden, you almost always end up with more than you can use. Want to waste less? Try making tomato powder (don’t worry, we’ll show you how to use it also).
Start with about 8 lbs. of tomatoes. Rinse and remove stems. Slice them thinly and place the slices in one layer on parchment paper lined baking sheets.
Set your oven to the lowest temperature, using the oven fan if you have one. Leave tomatoes in the oven for about 5 hours, or until you can see that the tomatoes are becoming brittle. This is important because it means that the moisture has been removed. Flip the tomatoes about halfway through.
Once they are dry, add your slices to a food processor or blender and blend until powdered. Store in glass jars.
How do I use it?
Tomato paste– Mix 2 parts powder to 1 part water.
Tomato sauce– 1 part tomato powder to 6 parts water. To make the equivalent to a standard jar, mix 1/3 cup tomato powder and 2 cups of water.
Tomato juice– 2 tbsp. tomato powder into 8 ounces of water.
Tomato soup– ½ cup tomato powder and 1 ½ cups water into a sauce pan, bring to a boil, reduce heat and add herbs of your choice.
Pizza sauce– Combine ½ cup tomato powder and 1 1/2 cups water into a saucepan. Bring to a boil, reduce heat, and add herbs to taste.
