Coconut Beet Overnight Oats

We here at GOLO like to search for and provide you with fun, interesting recipes. Overnight oats seem to be a favorite, so we are always on the search for more. Here’s one that we think you all may like!

Coconut Beet Overnight Oats

• 1/2 cup old fashioned oats

• 1 tbsp. chia seeds

• 1/2 cup water

• 1/4 cup full fat coconut milk

• 1 beet, cooked & peeled

• 1/2-inch ginger piece peeled

• 1/2 pomegranate, seeds only

• 1/2 tsp. pure maple syrup

• 3 tbsp unsweetened coconut flakes

• 1 ½ tbsp hemp or sunflower seeds

1. In a lidded jar, add the oats and chia seeds.

2. Add the coconut milk, water, maple syrup, coconut flakes and mix.

3. Lid the jar and let it sit overnight in the refrigerator.

4. In the morning, blend the beets, pomegranate seeds, and ginger in a blender. Pour mixture through strainer so that you are only getting the liquid and mix liquid in with the oats.

5. Garnish with hemp or sunflower seeds and enjoy!
