Carrot Waffles

Waffles are very filling and tasty- a great breakfast! Fortunately, for those who are on a weight loss journey, waffles are not completely off limits. There are many healthy versions that taste just as good as the “unhealthy” versions. Today, we are going to share a recipe for carrot waffles. Yes, we know it sounds odd but trust us!

Serving Size- 1 waffle

Ingredients
• 2 cups whole wheat flour
• 2 tsp. baking powder
• 2 tbsp. ground flaxseed
• ½ tsp. cinnamon
• 1 cup grated carrots
• 2 cups almond milk or whole milk (room temperature)
• ¼ cup melted coconut oil
• 1 tsp. vanilla extract
• 2 tbsp. pure maple syrup
• Pinch of salt

Directions
1. Preheat your waffle iron
2. In a large bowl, mix the flour, baking powder, flaxseed, cinnamon and a pinch of salt
3. In a separate bowl, mix together the grated carrots, your choice of milk, coconut oil, vanilla and maple syrup
4. Fold the carrot mixture into the dry ingredients and stir until combined
5. Scoop the appropriate amount of batter into your waffle iron and cook until edges are crispy
6. Enjoy!
